My Pinterest “Recipes to Try” board is filling up faster than I will ever be able to cook them all!  I’ve found a few duds in there, but for the most part it has added some nice variety to our old line-up of meals.  This new find is a definite keeper though!  I’m pretty sure that Crash Hot Potatoes will be making a regular appearance in our side dishes from now on.  Sorry I don’t have a better picture for you…I didn’t remember until the end of the meal and this poor, lone potato was the only survivor.

The original Pin I followed came from For the Love of Cooking.  I love her idea of topping them with sour cream, although I did not do that this time.  From there I followed the recipe back to The Pioneer Woman.  When I saw that, I knew it had to be good!  LOVE Pioneer Woman recipes.  I followed Pioneer Woman’s recipe almost exactly.  I didn’t have any fresh herbs, but I did sprinkle with fresh ground sea salt, fresh ground pepper, and some Italian blend spices.  Delicious!!  I’m not going to post the full recipe here since it is not mine, but follow one of the above sites and you won’t regret it!
